Finca Constancia is the new face of Spanish winemaking. Combining the need for modern, fruit-oriented wines with the ambition to produce wines of the highest quality, the company explored areas where this goal could be realized. In 2001, they purchased a 220-hectare property in Otero, near Toledo, and began planting 79 individual plots, classified according to soil type and microclimate. A modern winery was built. The vineyards host a range of local and international grape varieties, including Tempranillo, Cabernet Sauvignon, Syrah, Cabernet Franc, Petit Verdot, Graciano, Garnacha, Verdejo and Sauvignon Blanc. Finca Constancia is passionate about protecting the environment and is currently gradually transitioning to the use of biodynamic practices. Work in the vineyard is carried out at a pace dictated by the cycles of the moon and the position of the planets. Only composted plant material is used to nourish the soil and native fauna is planted to encourage a natural ecosystem.

After a careful night-time harvest, the grapes are soaked on their skins for two days to fully capture the expression of the soil. Alcoholic fermentation continues for 20 days in stainless steel tanks under fully controlled conditions. The wine then remains in contact with its natural lees for a further two months to develop an aromatic aftertaste and become fruity and well-balanced.

Five Hidden Lagoons Sauvignon Blanc (750 ml) is a dry white wine from Spain produced by Finca Constancia (or Vinas del Vero – depending on the market), and is part of a series inspired by the nature of the region between the Sierra de Gredos and Monte de Toledo mountains.
